Traditional cod

Although we like a lot, we had never purchased cod "real" (read: Do Porto) in my parents' house. Generally this fish consumption in the house of my mother, who makes very good preparations.


During my vacation, a walk through the grocery store [because I took a little more time trying to convince my mother to explore different brands and products] just found one called beautiful. It was a real investment ($), but worth it.

Next step: what to do? Since cod is good, we decided to do a more traditional feel good to the taste of all ingredients and especially the fish.


It has measures: two days before, we soaked in the water in the refrigerator. Every four hours or so, we exchanged the water. They were then boil and separate the chips (this time it looks like a glue joint in hand). Separately, cook some potatoes. Peeled and cut into slices 0.5 to 1cm. In advance, had already sliced peppers and sliced tomatoes and dropped into a pan with some olive oil and oven dried down to give one because I wanted a more concentrated flavor and less water in the final preparation.

With all the ingredients ready means it was only mount: olive oil in the refractory layer of potatoes, layer of cod, a layer of tomatoes, peppers and black olives, potatoes, cod ... and so on. Finally, one more olive oil and oven to heat more than to cook something.

It was served at a family lunch on Sunday. Despite so many other options, I only eat cod, because it was perfect. With a good salad leaves do not need anything else!
